Charcuterie pizza

Take your leftovers and make them into a great family dinner with this delicious charcuterie pizza. Make your own red wine oregano pizza sauce and add your favourite toppings like goat cheese, mozzarella, prosciutto and olives.

Ingredients

Red Wine Oregano Pizza Sauce

  • 1 1/2 tablespoons olive oil
  • 1/2 cup yellow onion, diced
  • 2 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup red wine
  • 28 ounces crushed tomatoes
  • 1/2 cup water
  • Salt, to taste

Charcuterie Pizza

  • 1 lb. ready to bake pizza dough
  • 1 tbsp olive oil
  • 1/3 cup Red Wine Pizza Sauce
  • 2–3 oz. goat cheese, crumbled
  • 1/4 cup shredded mozzarella
  • 1/4 cup olives of choice, halved
  • 1 oz. prosciutto, cut into small pieces, or more/less to taste
  • Drizzle of honey, optional
  • Red chili flakes for topping, optional

Directions

For the Pizza Sauce

  1. Heat the oil in a medium saucepan over medium heat.
  2. Add the onions and saute until translucent, approximately three to five minutes.
  3. Add the garlic, dried oregano, and red pepper flakes. Stir to combine and cook until fragrant, approximately one minute.
  4. Add the red wine. Cook to reduce the wine by about half, approximately five minutes. Add in the crushed tomatoes and water. Add a pinch of salt and stir to combine.
  5. Reduce heat to low and simmer for at least 15 minutes. The sauce flavours will continue to develop if you can cook it longer, ideally 90 minutes. If the sauce is getting too thick as it cooks, add a little water at a time.
  6. Set aside 1/3 cup of sauce for pizza. 

For the Pizza

  1. Preheat the oven to 425°F.
  2. Once the dough has rested, flour your work surface and roll your dough into a pizza. Transfer to a large lightly oiled baking sheet or hot pizza stone.
  3. Brush olive oil on top of the pizza, then evenly spread the pizza sauce.
  4. Next evenly distribute the crumbled goat cheese, mozzarella, olives and prosciutto.
  5. Bake for seven to nine minutes or until the crust is golden and the cheese is bubbly.
  6. Drizzle with honey and top with red chilli flakes if desired.
  7. Cut into slices and enjoy!
