Ingredients

  • 1-1/4 lb lean ground beef or veal (625 g)
  • 1/4 teaspoon each salt and black pepper (1 mL)
  • 1 cup shredded cheddar cheese (250 mL)
  • 1/3 cup mayonnaise (75 mL)
  • 1 package (14 oz/400 g) refrigerated pie crusts
  • 4 slices processed cheese
  • 1/2 cup sliced pickles (125 mL)
  • 1 large egg, lightly beaten

Directions

  1. In a skillet, cook beef, salt and pepper over medium-high heat for about eight minutes or until no longer pink inside. Drain fat, if any. Stir in shredded cheese and mayonnaise to combine.
  2. Preheat oven to 375°F (190°C). Lay one pie crust into a 9-inch (23 cm) pie plate. Spoon half of the beef filling into the pie crust bottom. Top with cheese slices and pickles. Spoon remaining beef over top. Lay remaining pie crust over top and pinch around edges to seal. Brush top with egg and cut a few vent slashes in the top of the pie.
  3. Bake for 30 to 40 minutes or until pastry is golden brown. Let cool slightly before cutting to serve.
