1 ½ cups grated smoked cheddar cheese, preferably maple or applewood smoked

Directions
Preheat your oven to 200F and place a baking sheet on the middle rack.
In a large shallow dish or baking pan, whisk the eggs, milk, maple syrup, nutmeg, salt, and pepper together.
Heat a large skillet over medium heat and place four slices of bread into the egg mixture, allowing them to soak for 20 to 30 seconds per side. When ready to fry the first batch, melt 1 tablespoon of butter with a little splash of canola oil in the pan and cook the French toast until golden brown on each side.
Place the French toast on the baking sheet in the oven to keep warm and continue soaking the remaining slices of bread. Cook in the remaining butter and a splash of oil until golden. Remove the baking sheet from the oven, transfer the rest of the French toast onto the sheet, top each piece with two pieces of bacon, and sprinkle with a good helping of the grated smoked cheddar cheese.
Turn your broiler to high and place the cheesy French toast back into the oven until the cheese is melted and slightly golden. Serve immediately with maple syrup and enjoy.
