  • 1 large piece of parchment paper, halved
  • 2 chicken drumssticks
  • 5 mushrooms, halved
  • 1 slice of lemon
  • 5 thin rounds of zucchini
  • 2 tablespoon chopped basil
  • 1/2 cup butter beans or any canned beans
  • 1 tablespoon of butter
  • 1 teaspoon olive oil
  • 1 garlic clove, smashed
  • Salt and pepper

  1. Lay out the parchment paper on the table and place the butterbeans in the centre
  2. Next, lay the mushrooms and the zucchini to build a base
  3. Place the chicken drumsticks on top with the garlic
  4. Season with salt and pepper
  5. Top with the slice of lemon, butter, olive oil and freshly chopped basil
  6. Fold over the parchment paper into a half moon. Working around the edges, start to crimp the edges around the parchment in order not to let anything leak while cooking.
  7. On a cooking tray, put the package in the oven at 400 degrees for 30-40 minutes or until the internal cooking temperature of the chicken is 165 degrees or higher.
  8. Serve on a plate, in the parchment.
