Chicken drumsticks en papillote
Ingredients
- 1 large piece of parchment paper, halved
- 2 chicken drumssticks
- 5 mushrooms, halved
- 1 slice of lemon
- 5 thin rounds of zucchini
- 2 tablespoon chopped basil
- 1/2 cup butter beans or any canned beans
- 1 tablespoon of butter
- 1 teaspoon olive oil
- 1 garlic clove, smashed
- Salt and pepper
Directions
- Lay out the parchment paper on the table and place the butterbeans in the centre
- Next, lay the mushrooms and the zucchini to build a base
- Place the chicken drumsticks on top with the garlic
- Season with salt and pepper
- Top with the slice of lemon, butter, olive oil and freshly chopped basil
- Fold over the parchment paper into a half moon. Working around the edges, start to crimp the edges around the parchment in order not to let anything leak while cooking.
- On a cooking tray, put the package in the oven at 400 degrees for 30-40 minutes or until the internal cooking temperature of the chicken is 165 degrees or higher.
- Serve on a plate, in the parchment.
