- 455 grams sweet cocktail tomatoes, quartered
- 1 cucumber, peeled and chopped
- 1 avocado, pit removed and cubed
- 1/2 cup fresh summer peas
- 1/3 red onion, diced
- 1 big handful fresh parsley, chopped
- 3 tablespoons fresh goat’s feta, crumbled
- 3 tablespoons extra virgin olive oil
- 4 tablespoons raw apple cider vinegar
- Sea salt to taste
