Cod with salsa and black beans
Ingredients
- 1.125 kilograms cod fillets
- 1-1/2 cups (375 mL) salsa
- 1-1/2 cups (375 mL) canned black beans, drained and rinsed
- 1-1/2 tablespoon (22 mL) olive oil
- 1/4 teaspoon (1 mL) salt
- 1/4 teaspoon (1 mL) ground black pepper
- Two 11-by-7-inch (28 by 18 cm) glass baking dishes
Directions
- Preheat the oven to 400°F (200°C).
- Brush the glass baking dish with the oil.
- Sprinkle the cod fillets on both sides with the salt and pepper. Place side-by-side in the prepared baking dish.
- Pour the salsa and black beans over the fish and bake, uncovered, until the fish is opaque and flakes with a fork, 15 to 20 minutes.
