Ingredients
4 tablespoons olive oil
1/4 cup diced carrot
1/4 cup diced celery
1/4 cup diced onion
2 cloves of garlic
2 tablespoons tomato paste
3 tablespoons of all-purpose flour
750 milliliters of craft beer
1 litre of turkey stock
3 sprigs of fresh sage
2 sprigs of fresh thyme
2 Bay leaves
Salt and pepper
Directions
Sauté the carrot, celery, onion and garlic it the olive oil till translucent about five minutes.
Add the tomato paste and cook it out for one minute and add the all-purpose flour and cook it out for one more minute.
Pour in the craft beer and let reduce to 1/2 and add the turkey stock and herbs thyme, sage and bay leaf.
Let it all cook for about 20/30 minutes, strain with a fine strainer, check the seasoning, then add salt and pepper.
