Craft beer turkey gravy

A creative take on everyone's favourite condiment.

Ingredients
- 4 tablespoons olive oil
- 1/4 cup diced carrot
- 1/4 cup diced celery
- 1/4 cup diced onion
- 2 cloves of garlic
- 2 tablespoons tomato paste
- 3 tablespoons of all-purpose flour
- 750 milliliters of craft beer
- 1 litre of turkey stock
- 3 sprigs of fresh sage
- 2 sprigs of fresh thyme
- 2 Bay leaves
- Salt and pepper
Directions
- Sauté the carrot, celery, onion and garlic it the olive oil till translucent about five minutes.
- Add the tomato paste and cook it out for one minute and add the all-purpose flour and cook it out for one more minute.
- Pour in the craft beer and let reduce to 1/2 and add the turkey stock and herbs thyme, sage and bay leaf.
- Let it all cook for about 20/30 minutes, strain with a fine strainer, check the seasoning, then add salt and pepper.
