1 standard sized shrimp ring (the larger the shrimp the better)
For the sauce:
3/4 cup mayonnaise
1/4 cup natural Greek yogurt
1 tablespoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/44 parsley, finely chopped
For the crunchy dip:
1 cup panko breadcrumbs
1 teaspoon coriander seeds
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cilantro, finely chopped
1/2 cup roasted almonds
Directions
Thaw out the shrimp ring in the refrigerator at least three to four hours prior to needing it.
In a bowl, combine the mayonnaise, Greek yogurt, cayenne pepper, salt, pepper and parsley. Mix together until combined.
In a plastic food storage bag add in the coriander seeds and the almonds. Using a rolling pin crush the almonds and coriander seeds until they are about the size of the panko breadcrumbs.
In a separate bowl, combine the panko breadcrumbs, crushed coriander seeds, salt, pepper, cilantro and crushed almonds. Mix together until combined.
Place each of the shrimp on a decorative skewer.
Using a long platter of your choice arrange the shrimp, bowl of sauce and bowl of the crunchy dip. This dish is so much fun and interactive, your guests have to take the shrimp, dip it into the creamy sauce and then into the crunchy dip! Delicious!
