Curried Sloppy Joes

Try this healthy version of sloppy joes at your next family get-together! Swap out ketchup and sugar for pumpkin purée and spinach. And add a twist with spices like curry powder, turmeric and ginger. This recipe is from Slimming Meals That Heal and reprinted with permission of Penguin Random House.

Ingredients

Curried Sloppy Joes

  • 1 lb ground turkey, chicken or crumbled tempeh
  • 1 cup vegetable broth or tomato juice
  • ½ teaspoon pink salt or gray sea salt
  • 1 tablespoon curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 2 teaspoons ground ginger
  • 1 tablespoon fresh ginger root, minced
  • 28 oz can diced tomatoes
  • 1 ½ cups squash puree or pumpkin puree
  • 2 cups onion, diced
  • 1 clove garlic, minced
  • 3 cups celery, sliced
  • 4 cups baby spinach
  • ¾ cup coconut milk
  • Your choice of buns for serving

Directions

  1. Add broth, salt and spices to a large pot on medium heat and cook ground poultry (or tempeh) for 5 minutes, stirring occasionally.
  2. Add ginger, diced tomatoes and squash purée and cook another 10 minutes.
  3. Add onion, garlic and celery and simmer until vegetables are tender but crisp (approximately 5 minutes).
  4. Pull off the heat and mix in the spinach and coconut milk.
  5. Assemble on your choice of bun.
