Ingredients
2 lbs small potatoes, boiled and peeled
1/4 cup sugar
2 tablespoons butter
3 tablespoons water
1/4 teaspoon chili flake
Directions
Boil your potatoes in seasoned water until tender.
Peel each potato and allow it to cool in the fridge overnight (can be done a few days ahead).
When ready to serve, combine the sugar, water, and chili flake in a large skillet. Cook on medium-high heat until melted. Cook for two to three minutes, then add the potatoes and coat. Cook another five to six minutes until deeply caramelized.
