Donut and avocado ice cream sandwiches
Ingredients
- 2 cups whipping cream
- 300 mL condensed milk
- 2 ripe avocados
- 2 tablespoons lime juice
- 4 glazed donuts, cut in half
- 1 cup mini semi-sweet chocolate chips
Directions
Ice cream
- Place a 9 inch loaf pan in freezer to chill while you prepare ice cream.
- In a large bowl of a mixer, add cream and whip until peaks form.
- Add condense milk and beat until well incorporated and creamy.
- Beat in avocados until creamy and stir in lime juice.
- Pour mixture in chilled loaf pan, cover top with plastic wrap and place in freezer for at least 4 hours or overnight.
Sandwiches
- Place two large scoops of ice cream on half of the cut side of the donut. Top with the half and lightly squeeze to spread ice cream.
- Place mini chocolate chips on small plate and roll sides of sandwich in the the chocolate chips.
- Serve immediately
