Easy Leftover Vegetable Hummus

If you often find yourself with leftover cooked veggies in the fridge, here's the easiest way to make sure they don't go to waste! Hummus is the perfect snack or appetizer for any kind of day - whether you're hosting a backyard BBQ, having a picnic at the beach, or simply needing a snack for movie night. Here's an easy way to get an extra dose of protein and vitamins and a bowl full of rich flavours!

Ingredients

Vegetable Hummus

  • 1 can of chickpeas
  • 1/2 lb leftover cooked vegetables
  • 2 tablespoons (30ml) tahini
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5 ml) dehydrated garlic
  • 1/2 teaspoon (2.5 ml) ground cumin
  • 1 tablespoon (15 ml) dehydrated onion
  • Salt to taste

Directions

  1. Drain and rinse a can of chickpeas. Add to bowl/mixer along with leftover cooked vegetables, 2 tablespoons tahini, 2 tablespoons of good olive oil, 1 teaspoon of dehydrated garlic, ½ teaspoon of ground cumin, 1 tablespoon of dehydrated onion and salt to taste. Blend together.
  2. Garnish with pistachios and olive oil. Serve with fresh chopped vegetables.
