European-style pancakes with macerated strawberries

We're celebrating Shrove Tuesday with these delicious pancakes. Shrove Tuesday is the traditional Christian feast the day before the start of Lent. Historically, it was the last day to use up eggs and fats before embarking on a 40-day fast, and what better way to use up these ingredients than by whipping up some pancakes? Up your breakfast game with these extra indulgent European-style pancakes topped with maple syrup, whipped cream and macerated strawberries.

Ingredients
Macerated Strawberries
- 4 cups fresh strawberries
- 2 tablespoons sugar
- 1 tablespoon balsamic vinegar
European-style Pancakes
- 6 eggs
- 2 cups milk
- 1 1/4 cups all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
Directions
European-style Pancakes
- In a bowl, whisk together eggs and milk.
- Add flour, sugar, salt and vanilla; whisk until no lumps remain. (Optional: Sift through a fine-mesh sieve).
- Let sit for a minimum of one hour or overnight in the refrigerator.
Macerated Strawberries
- In a bowl, combine four cups of quartered strawberries, two tablespoons of granulated sugar and one tablespoon of balsamic vinegar. Let stand for a minimum of 10 minutes.
Cook and Serve
- Pour one-third of a cup of batter into the skillet, tilting and swirling to coat the bottom.
- Heat until golden, then flip and brown on the other side. Continue to repeat until there is no more batter left.
- Serve immediately, topped with maple syrup, macerated strawberries and whipped cream. Enjoy!
