After 24 hours, put the fava beans into a pot with fresh water and bring to a boil. Cook fava beans until they are soft.
Strain and save two cups of water. Place the remaining water and beans into a blender and blend until it becomes a purée. If find your purée texture is too thick, use the leftover boiled water.
Boil the cicoria for one minute. Bring it to a boil then remove and place in cold water. Repeat this step four times in a sepaerate pot with fresh water each time because the cicoria is too bitter (especially the wild one).
Now you must assemble the plate. Season with olive oil and salt and pepper to taste.
Sautee the cicoria with olive oil, garlic, salt, pepper, chili peppers.
Place sautéed cicoria on top of the fava beans puree. Decorate everything with two crostinis and finish with a sprinkle of olive oil.
