100 grams Fava beans

100 grams cicoria

Extra virgin olive oil

2 crostini bread

Directions
Fava beans puree:
- Soak fava beans for 24 hours before preparation.
- After 24 hours, put the fava beans into a pot with fresh water and bring to a boil. Cook fava beans until they are soft.
- Strain and save two cups of water. Place the remaining water and beans into a blender and blend until it becomes a purée. If find your purée texture is too thick, use the leftover boiled water.
- Boil the cicoria for one minute. Bring it to a boil then remove and place in cold water. Repeat this step four times in a sepaerate pot with fresh water each time because the cicoria is too bitter (especially the wild one).
- Now you must assemble the plate. Season with olive oil and salt and pepper to taste.
- Sautee the cicoria with olive oil, garlic, salt, pepper, chili peppers.
- Place sautéed cicoria on top of the fava beans puree. Decorate everything with two crostinis and finish with a sprinkle of olive oil.
