Flapper pie

Ingredients

Crust:

  • 7 Double Graham wafers
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1/2 teaspoon cinnamon

Filling:

  • 2 cups milk
  • 3 egg yolks
  • 2 tablespoons cornstarch
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Topping:

  • 3 egg whites
  • 3 tablespoons of icing sugar

Directions

Crust:

  1. Mix all ingredients together and press into pie plate (Save 1/2 cup for the top).

Filling:

  1. Combine all into a pot over medium heat stirring constantly until thick.

Topping:

  1. Beat egg whites and icing sugar until stiff peaks.
  2. Spread overtop of pie, sprinkle left over graham cracker mixture over top and bake at 250 for 20 minutes.
  3. Allow to cool and serve!
