Fresh green pea salad
Ingredients
- 1 bunch watercress
- 400 grams shelled peas, fresh or thawed from frozen
- 1 Granny Smith apple, cored and cut into matchsticks
Scallion dressing:
- 1/4 cup (60 milliliters) sour cream
- 2 tablespoons (30 milliliters) extra virgin olive oil
- 1 tablespoons (15 milliliters) vinegar
- 1 teaspoon (5 milliliters) sugar
- 1/4 cup (60 milliliters) finely chopped scallions
- 1/8 teaspoon (0.5 milliliters) salt
- 1/8 teaspoon (0.5 ml) pepper
Directions
- Add watercress, peas, and apple matchsticks to a large bowl.
- To make the scallion dressing, combine sour cream, olive oil, vinegar, sugar, chopped scallions, salt and pepper in a glass jar. Put lid on jar and shake to mix.
- Pour dressing over salad and toss to combine.
