Garlicky peanut noodles with cucumber and chilli crisp

Bring the taste of Malaysia with this simple dish!

Ingredients

Sauce

  • 1/4 cup natural peanut butter
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon gochujang
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon brown sugar
  • 4 cloves garlic, finely grated

Ramen

  • 6 oz pasta noddles of your choice (linguine, spaghetti, ramen noodles)
  • 1 Persian cucumber, thinly sliced into half moons

Serve

  • Chilli crispy sauce or chilli oil, for serving

Directions

Sauce

  1. In a large mixing bowl, whisk together the peanut butter, sesame oil, rice vinegar, gochujang, soy sauce, brown sugar, and garlic until combined. 
  2. Set aside.

Ramen

  1. Cook the noodles according to package directions.
  2.  Transfer the noodles directly to the peanut sauce and toss until the noodles are evenly coated, adding a little bit of cooking water as needed to loosen the sauce.

Serve

  1. Add half of the cucumbers and toss them together. 
  2. Divide into two serving bowls and garnish with the remaining cucumbers and a spoonful of chili crisp sauce. Serve warm. Enjoy!
