Garlicky peanut noodles with cucumber and chilli crisp

Ingredients
Sauce
- 1/4 cup natural peanut butter
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon gochujang
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon brown sugar
- 4 cloves garlic, finely grated
Ramen
- 6 oz pasta noddles of your choice (linguine, spaghetti, ramen noodles)
- 1 Persian cucumber, thinly sliced into half moons
Serve
- Chilli crispy sauce or chilli oil, for serving
Directions
Sauce
- In a large mixing bowl, whisk together the peanut butter, sesame oil, rice vinegar, gochujang, soy sauce, brown sugar, and garlic until combined.
- Set aside.
Ramen
- Cook the noodles according to package directions.
- Transfer the noodles directly to the peanut sauce and toss until the noodles are evenly coated, adding a little bit of cooking water as needed to loosen the sauce.
Serve
- Add half of the cucumbers and toss them together.
- Divide into two serving bowls and garnish with the remaining cucumbers and a spoonful of chili crisp sauce. Serve warm. Enjoy!
