Garlicky shrimp banh mi

Ingredients

  • 1 Viet Baguette / medium size baguette /roll

Slaw:

  • 1 cup of white and purple shredded cabbage
  • 1/4 cup of shredded carrot
  • 2 tablespoons black pepper vinegrette dressing
  • 1.5 tablespoon of mayo

Shrimp:

  • 6-7 jumbo shrimps
  • 1 teaspoon of chopped garlic
  • Vegetable cooking oil

Toppings/garnish:

  • 1 tablespoon of fried shallot
  • 1/2 tablespoon of crushed roasted peanut
  • 1 pinch of black sesame seeds
  • 2-3 sprigs of cilantro

Directions

Slaw:

  1. Mix cabbage and carrot in with the two tablespoons of black pepper and 1.5 tablespoon of mayonnaise.

Shrimp:

  1. Sauté the shrimp with one teaspoon of chopped garlic in the vegetable cooking oil.

Sandwich:

  1. Place ingredients in baguette, then top with fried shallot, roasted peanut, black sesame seeds and/or two to three sprigs of cilantro. Serve.
