Gluten free quinoa and bread stuffing

For those who are grain/gluten free or celiac, the lack of stuffing on their plate can be downright depressing- I know my plate would feel incomplete without it. However, by employing GF quinoa and bread this is not only a delicious stuffing to adorn your holiday table, but one that everyone can enjoy.


  • 1 loaf gluten-free bread (one that you really like)
  • 1 cup cooked white quinoa
  • 3/4 cup butter
  • 1 medium yellow onion, chopped
  • 4 stalks celery, thinly sliced
  • 1-1/2 teaspoons dried thyme leaves
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups chicken or veggie broth (3 cups for a wetter stuffing)


  1. Let bread slices air dry for one to two hours, then cut into 2.5 centimeter pieces.
  2. In a Dutch oven over medium heat, melt butter. Add onion and celery and cook until the onion is soft and translucent.
  3. Stir in thyme, sage, rosemary, salt, and pepper.
  4. Add bread cubes, quinoa and mix until evenly coated.
  5. Drizzle broth over the mixture and toss until well mixed.
  6. Bake in a greased 2.3 liter casserole dish at 350°F for 35 to 45 minutes.
