Gluten free quinoa and bread stuffing

For those who are grain/gluten free or celiac, the lack of stuffing on their plate can be downright depressing- I know my plate would feel incomplete without it. However, by employing GF quinoa and bread this is not only a delicious stuffing to adorn your holiday table, but one that everyone can enjoy.

- Let bread slices air dry for one to two hours, then cut into 2.5 centimeter pieces.
- In a Dutch oven over medium heat, melt butter. Add onion and celery and cook until the onion is soft and translucent.
- Stir in thyme, sage, rosemary, salt, and pepper.
- Add bread cubes, quinoa and mix until evenly coated.
- Drizzle broth over the mixture and toss until well mixed.
- Bake in a greased 2.3 liter casserole dish at 350°F for 35 to 45 minutes.
