Goat cheese, bacon, asparagus tart

I love this recipe. It’s a simple kind of flat bread or quick pizza, but it’s a complete show stopper. Only takes a few ingredients, so make sure to buy the higher quality ones you can. It’s really important to showcase the asparagus because we are in prime asparagus season!
Ingredients
- 1 large sheet puff pastry
- 1 bunch asparagus
- 4 pieces bacon, cut
- Zest of 1 lemon
- 1/2 cup Parmesan cheese
- 3/4 cup goat cheese
- Salt
- Pepper
Directions
- Start by rolling out your puffed pastry sheet with a little bit of flour until it’s the size of a square pizza, and about six millimeters thick.
- Bake in the oven at 425 for ten minutes.
- While the pastry is baking, sauté bacon and asparagus (bottoms removed) for about 4 minutes set aside and mix together the lemon zest, goat cheese and Parmesan in a bowl with a dash of salt and pepper in a medium hot pan with some oil for about four to five minutes until bacon is browned and asparagus is cooked through. set aside and mix together the lemon zest, goat cheese and Parmesan in a bowl with a dash of salt and pepper.
- Remove puff pastry and spread goat cheese mix across from end to end.
- Place bacon and asparagus over top and bake in the oven for another 15-20 minutes at 425 until golden and caramelized.
- Serve immediately!
