Greek style green bean salad

This salad has so many authentic Greek flavours, you'll feel like you're on vacation.

Ingredients

  • 455 grams green beans, blanched for 2 minutes
  • 1 bunch green onions, chopped
  • Handful chopped fresh dill
  • Sea salt and freshly cracked black pepper, to taste
  • 2 cups red grape tomatoes, sliced in half lengthwise
  • 1/2 cup Kalamata olive, pitted
  • 1/4 cup extra virgin olive oil, divided
  • 1 clove garlic, sliced
  • 2 tablespoons capers

Directions

  1. Toss together the beans, green onions, dill, grape tomatoes, three tablespoons olive oil and olives in a bowl.  Set aside.
  2. In a small pan over medium heat cook the garlic, until just soft and add the capers.
  3. Cook until garlic is golden. Remove immediately and pour over beans. 
  4. Toss to blend.
