900 grams ground chicken (or any other groud meat: pork, lamb, beef, etc)
5 Thai chilis, finely sliced
1/2 tablespoon freshly grated ginger
1/2 tablespoon freshly grated garlic
1/3 cup chopped fresh coriander
2 teaspoons salt
2 large eggs, whisked
2 cups bread crumbs (Panko or regular)
4 tablespoons canola oil
Assemble:
Burger buns (buttered and toasted in a pan)
Shredded iceberg lettuce
Mayonnaise
Directions
In a bowl, combine ground chicken, chilis, ginger, garlic, coriander, and salt. Mix to combine, and shape into six round patties.
Dip each patty into whisked egg and then into the breadcrumbs to coat.
Heat a frying pan on medium-high heat and add canola oil. Gently lower in patties, and fry for three to four minutes on each side or until golden and crispy on the outside, and juicy and cooked through in the middle.
Place the cooked patty on the bottom bun and top with lettuce. Spread top bun generously with mayonnaise, and place on top of the burger. Serve immediately. Enjoy! :)
