Grilled brie with grapes and pistachios

This grilled brie with grapes and pistachios will be a major winner at your next dinner party because it's so easy to throw together—not to mention, it's delicious! It also looks so pretty when baked in a cast-iron skillet and placed on a platter garnished with fresh red grapes, basil leaves and balsamic vinegar and served toasty baguette slices and crackers.

Ingredients

Grilled Brie with Grapes and Pistachios

  • 2 to 3 clusters red seedless grapes
  • 2 tsp olive oil
  • Salt and pepper to season
  • 1 (350 to 400 g) wheel brie
  • 2 tbsp balsamic vinegar
  • 1/4 cup pistachios, finely chopped
  • Basil leaves, for garnish
  • Sliced baguette and crackers, for serving

Directions

  1. Place a piece of aluminum foil under the rack of your grill and preheat it to medium-high.
  2. Drizzle the oil over onto the grapes and season with salt and pepper.
  3. Place the grapes and the brie (Tip: Use a cheaper, firmer variety of brie for this recipe as it is less likely to burst while grilling.onto the grill) and cook, turning both occasionally, until the grapes are lightly charred and bursting, about four to six minutes.
  4. Remove the grapes from the heat, transfer to the serving platter and drizzle with balsamic.
  5. Continue to cook the brie for two to three minutes or until grill marks appear and it is soft but you are still able to lift it. Add to the platter.
  6. Scatter the pistachios over the brie and grapes and garnish with a few basil leaves. Serve immediately with sliced baguette and crackers. Enjoy!
