Grilled broccoli Caesar with creamy dressing
Ingredients
- 2 heads broccoli, cut into long spears
- 2 tablespoons canola oil
- Salt to season
Dressing:
- 2 tablespoons mayonnaise
- 3 tablespoons plain yogurt
- 1 tablespoon olive oil
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1 tablespoon white wine vinegar
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 1 clove garlic, finely minced
- 1/4 teaspoon freshly ground pepper
Garnish:
- 3/4 cup bacon bits
- 1/2 cup grated parmesan
Directions
- Preheat the BBQ to 400F
- Toss the broccoli spears with the canola oil and salt.
- Lay the broccoli on the grill and cook, turning occasionally until the broccoli is slightly charged and cooked tender crisp. Remove and place on a serving platter to cool.
- Whisk together all the ingredients for the dressing. Drizzle it over the top of the broccoli and garnish with bacon bits and parmesan.
