Grilled corn with bacon butter with aged Canadian cheddar and scallions
Ingredients
- 4 shucked sweet corn cobs
- Vegetable oil for grill
- Assorted flavoured butters of your choice
BACON BUTTER
- ½ cup unsalted butter, softened
- ½ cup grated aged Canadian cheddar cheese
- 6 slices crispy cooked bacon, finely chopped
- 4 scallions, finely chopped
- ½ teaspoon fresh thyme leaves, finely chopped
- ½ teaspoon salt
- ⅛ teaspoon cracked black pepper Garnish with additional cheese, bacon and scallions, if desired.
Directions
- In a pot of boiling, salted water, cook corn five minutes, then transfer to a hot, oiled grill and barbecue until nicely charred on all sides.
- In a small bowl, stir together butter, cheese, bacon, scallions, thyme, salt and pepper until combined, cover, and refrigerate until ready to serve.
- Serve immediately with butters and, if desired, additional garnishes.
