Ingredients
4 shucked sweet corn cobs
Vegetable oil for grill
Assorted flavoured butters of your choice
BACON BUTTER
½ cup unsalted butter, softened
½ cup grated aged Canadian cheddar cheese
6 slices crispy cooked bacon, finely chopped
4 scallions, finely chopped
½ teaspoon fresh thyme leaves, finely chopped
½ teaspoon salt
⅛ teaspoon cracked black pepper Garnish with additional cheese, bacon and scallions, if desired.
Directions
In a pot of boiling, salted water, cook corn five minutes, then transfer to a hot, oiled grill and barbecue until nicely charred on all sides.
In a small bowl, stir together butter, cheese, bacon, scallions, thyme, salt and pepper until combined, cover, and refrigerate until ready to serve.
Serve immediately with butters and, if desired, additional garnishes.
