Grilled lamb chops with mint chimichurri

Super easy to make and to eat! Whip up these grilled lamb chops in 15 minutes, served with a homemade mint chimichurri that you'll want to use as a dip for everything.  



Mint Chimichurri

  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 bunch mint, finely chopped
  • 1/2 bunch parsley, finely chopped
  • 1/4 teaspoon chilli flakes
  • 3 cloves garlic, finely minced
  • 1 shallot, finely minced
  • 1 lemon, zested
  • 1 teaspoon salt

Grilled Lamb Chops

  • 8 lamb chops
  • Salt and black pepper, to season


  • Lemon juice, for serving


Mint Chimichurri

  1. Combine the vinegar, oil, mint, parsley, chilli flakes, garlic, shallot, lemon zest, and salt in a bowl.  Whisk well to combine and set aside. 

Grilled Lamb Chops 

  1. Preheat your greased grill (or grill pan if cooking indoors) over medium high.  When hot, season the lamb chops with salt and pepper on all sides, then cook for two to three minutes per side. 
  2. Remove and transfer the cooked lamb chops to your serving platter. 


  1. Spoon on the chimichurri and garnish with an extra squeeze of lemon. Enjoy!
