Herb and pistachio crusted goat cheese

This fresh herb, lemon zest and pistachio-crusted goat cheese is perfectly paired with crispy baguette slices, fresh juicy figs and homemade peppered honey. Serve this yummy appetizer at your next holiday get-together and watch it all disappear.

Ingredients
Herb and Pistachio-Crusted Goat Cheese
- 300 g softened unripened goat milk cheese log
- 1 tablespoon (15 mL) Italian flat leaf parsley with stems, finely chopped, plus a few sprigs for garnish
- 1 tablespoon (15 mL) chives, finely chopped, plus a few sprigs for garnish
- 1 tablespoon (15 mL) fresh basil, finely chopped, plus 6-8 basil leaves for garnish
- Zest of 1 lemon
- 2 tablespoons unsalted pistachios, finely chopped
Peppered Honey
- 1/3 cup quality liquid honey
- 1 teaspoon ground black pepper
To Serve
- 1 small baguette, cut into 1/4 inch thin slices
- 6 fresh figs, quartered
Directions
Herb and Pistachio-Crusted Goat Cheese
- Mix together herbs, lemon zest and pistachios.
- Spread the mixture out evenly on a plate.
- Roll cheese logs in herb and pistachio mixture pressing gently until well coated. Refrigerate cheese log until ready to serve.
Peppered Honey
- Stir honey and black pepper together until well blended and place in a small serving bowl with a honey stick or small serving spoon.
To Assemble
- On a medium platter or wood board, place the goat cheese log in the centre.
- Arrange figs and baguette evenly around goat cheese.
- Place a small bowl of honey on a platter or board with a cheese log, figs and baguette.
- Garnish cheese log with additional fresh herbs for a beautiful presentation.
- Spread goat cheese on baguette, top with fig and drizzle with peppered honey. Enjoy!
