Pre-heat oven to 400° and line a baking sheet with parchment paper.
Cut the chicken breasts into bite size pieces or cube the blocks of tofu.
Create a dredging station by adding the flour to one bowl, the whisked eggs to another bowl, and the panko, salt, pepper and garlic powder to a third bowl.
Dredge your chicken or tofu first in the flour, then in the egg and finally in the breadcrumb mixture ensuring to coat them evenly each time.
Arrange the coated chicken or tofu on the baking sheet and bake for 20 minutes, flipping them half way through the cooking process.
While they are in the oven bring the bbq sauce, honey and ketchup to a simmer in a pot over medium high heat.
Once the chicken or tofu is out of the oven toss them in the honey bbq sauce and serve warm. Enjoy!
