Honey BBQ chicken or tofu nuggets
Ingredients
- 6 boneless, skinless chicken breasts OR
- 2 blocks of tofu
- 1 cup all purpose flour
- 2 eggs, whisked
- 3 cups panko breadcrumbs
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup store bought bbq sauce
- 1/4 cup honey or maple syrup
- 1/4 cup ketchup
Directions
- Pre-heat oven to 400° and line a baking sheet with parchment paper.
- Cut the chicken breasts into bite size pieces or cube the blocks of tofu.
- Create a dredging station by adding the flour to one bowl, the whisked eggs to another bowl, and the panko, salt, pepper and garlic powder to a third bowl.
- Dredge your chicken or tofu first in the flour, then in the egg and finally in the breadcrumb mixture ensuring to coat them evenly each time.
- Arrange the coated chicken or tofu on the baking sheet and bake for 20 minutes, flipping them half way through the cooking process.
- While they are in the oven bring the bbq sauce, honey and ketchup to a simmer in a pot over medium high heat.
- Once the chicken or tofu is out of the oven toss them in the honey bbq sauce and serve warm. Enjoy!
