Hot gin punch

This is the exception to the rule of heating spirits. Almost taking a cue from a mulled wine, this is a very traditional Christmas drink, that is mentioned in dickens’ A Christmas Carol. You can use sherry or Madeira in place of the port if you want.

Ingredients
- 750 milliliters London Dry Gin
- 750 milliliters Port (or another sweet, fortified wine)
- A few sliced of lemon
- A few slices of orange
- 5 whole cloves
- 1 large cinnamon stick
- 90 milliliters fresh lemon juice
- 30 milliliters honey
- Pinch of nutmeg
Directions
- Combine all ingredients in a large sauce pot and simmer gently over low heat for about 20 minutes to let the flavours infuse. Strain into a punch bowl and float fresh citrus slices pierced with cloves on top. Place a rosemary twig in punch cups and allow guests to ladle themselves.
