1/2 cup unsalted butter
1 (250 grams) bag miniature marshmallows, divided
1 teaspoon vanilla extract
5-3/4 cups crispy rice cereal

- Lightly grease a 9-inch square baking dish with non-stick cooking spray and line the bottom and sides with parchment paper. In a large saucepan set over medium heat, melt the butter and stir in all but one cup of the marshmallows. Allow the marshmallows to melt, stirring frequently, then stir in the vanilla extract.
- Remove the pan from the heat, stir in the cereal and reserved marshmallows until evenly combined, then transfer into the prepared baking dish. Press the marshmallow cereal mixture down with a lightly greased spoon or spatula until flat then set aside to cool completely to room temperature.
- When cool, cut into 12 equal rectangles and set aside on a fresh piece of parchment paper. In a small microwave-safe dish, melt candy melts on low until smooth, stirring after every 15 to 20. Melt as many colours as you’d like then dip the top half of each cereal treat into the candy melts then decorate with as many eyes as your monster needs!
