We've all let fruits and veggies sit a little too long before having a chance to use them, but rather than tossing them straight into the compost, Vijaya shares an easy and safe way to use them up.

Ingredients
2 cups, chopped overripe mango
Juice of 1 lime
2 tablespoons sugar
8 mint leaves
Pinch of salt
1/2 cup water
Directions
In a blender, add all ingredients and puree until smooth. Pour into popsicle molds and freeze until solid.
To unmold, run molds briefly under warm water and remove popsicles.
