Maple mustard

Mustard is one of those classic condiments that you need to amp up the flavour. Rodney Bowers' maple mustard is one you have to try.

Ingredients
- ¼ cup brown mustard seeds
- ¼ cup yellow mustard seeds
- ½ cup white wine
- 2 tbsp maple syrup
- 1 teaspoon kosher salt
Directions
- Place mustard seeds in a medium-size bowl. Stir in 1/2 cup cold water and the wine. Cover and let stand overnight.
- Purée 1/2 mustard with salt and syrup until your preferred consistency. Fold in the rest and store in an airtight container.
