250 grams piece of feta (whatever feta you prefer)

2 tablespoons extra virgin olive oil

2 teaspoons red wine vinegar

1/2 teaspoon sesame oil

Small handful sesame seeds

Finely chopped parsley

Quarter piece shallot, finely chopped

Freshly chopped red chili (just a touch)

Crushed marcona almonds
Directions
- Whisk all wet ingredients and then add all dry ingredients and mix together well.
- Pour marinade over feta and enjoy with crunchy bread.
- Ideally, prepare marinade a few hours before serving so flavours incorporate well.
