Mexican black bean salsa


  • 1/4 cup (60 milliliters) olive oil
  • 1/4 cup (60 milliliters) lime juice
  • 1 tablespoon (15 milliliters) honey
  • 1 teaspoon (5 milliliters) chili powder
  • 1/2 teaspoon (2.5 milliliters) garlic powder
  • 1/2 teaspoon (2.5 milliliters) salt
  • 1 x 540 milliliters can black beans, drained and rinsed
  • 1 x 540 milliliters can corn niblets, drained and rinsed
  • 1/2 red onion, chopped
  • 1/2 cup (120 milliliters) chopped cilantro, plus more for garnish


  1. Combine olive oil, lime juice, honey, chili powder, garlic powder, and salt in a large bowl. Add black beans, corn niblets, red onion and chopped cilantro to bowl with dressing and stir to combine thoroughly. Top with extra chopped cilantro to garnish.
