Mini bundt cake

Fun, bite-sized, and perfect for any occasion! 



  • 1 1/2 cups unsalted butter
  • 1 1/2 cups sugar
  • 6 eggs (room temperature)
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 3 cups flour
  • 1 tablespoon vanilla extract
  • 3/4 cup milk
  • Icing sugar, for garnish
  • Mini eggs, icing, for garnish (optional)


  1.  Preheat the oven to 350° F.         
  2. Mix butter and sugar until fluffy.
  3. Add baking powder and salt. Mix well.
  4. Add three eggs, one at a time, and mix each individually well. Add in the fourth egg.
  5. Add two tablespoons of flour. Repeat for the fifth and sixth eggs.
  6. Combine vanilla with milk.
  7. Add one-third of the flour and half of milk, then one-third of flour and half of milk then one-third flour.
  8. Pour batter into the greased pan.
  9. Bake for 25 minutes.
  10. Decorate with icing sugar and mini eggs or fill the center with icing and top with a chocolate-covered strawberry that looks like a carrot. Enjoy!
