1 lemon half
1 beet slice (optional)
- In mason jar or heatproof container, stir together water and sugar. Microwave on high for until completely clear, about 90 seconds. Stir and let cool.
- Into martini shaker filled with ice, squeeze juice from one lemon half (two if you like it very sour) and add peel. Add 1/4 cup of simple syrup and beet slice (if using). Shake vigorously for 30 seconds. Pour into chilled glass.
