Healthy bites that are packed with natural sugar!

Ingredients
1.5 cups organic rolled oats (grind 1 cup into flour and keep 1/2 cup whole)
1/2 cup coconut sugar
1 teaspoon cinnamon
1/4 cup virgin coconut oil (liquid)
1/4 cup coconut milk (can with two ingredients, coconut and water)
3-4 Medjool dates, chopped small
Directions
Preheat oven to 350 F
In a small food processor grind down one cup of oats and pour into a medium bowl.
Add in additional 1/2 cup whole oats to the bowl, followed by the coconut sugar and cinnamon and stir.
Melt down coconut oil (if needed).
Mix together coconut oil and coconut milk (store can in the pantry, so it’s not cold as it will harden the coconut oil).
Add coconut oil/milk mixture to the dry ingredients and stir.
Chop up medjool dates (remove pit first) and add to the mixture.
Add to mini muffin pan and press down.
Bake for 20 minutes or until golden brown.
LET COOL for 20 minutes to harden. Bites will crumble if eaten out of the oven.
