Oven-baked lemon pepper salmon

Ingredients

  • 4 salmon fillets
  • 1 teaspoon black pepper
  • 2/3 teaspoon sea salt
  • 1/2 tablespoon lemon zest
  • 1 1/2 lemons, juice of one lemon plus slices for garnish
  • 1 tomato, cut into 4 thick slices for garnish
  • 1/2 tablespoon olive oil

Directions

  1. Preheat the oven to 420° F.
  2. Combine the salt and pepper in a small ramekin.
  3. Mix lemon juice, zest and olive oil.
  4. Place the salmon fillets in an oven-proof baking dish. It's best not to overlap the fillets if they're too thick. Season each fillet with the salt and pepper mixture on both sides.
  5. Arrange the salmon fillet skin down and pour the lemon juice mixture over the fillets.
  6. Top the fillets with lemon and tomato slices and send to bake for 15 minutes or until the salmon is cooked through. The lemon pepper salmon is done when it flakes easily with a fork. Serve and enjoy!
