Ingredients

455 grams of pork tenderloin, cut into 3 even sized pieces

12 cups of water

2 pieces of ginger (65 grams), peeled and cut into 1 x 5 centimeter pieces

7 dates (35 grams)

1 apple with skin on, cut into 2.5 centimeter pieces with seeds removed

1/4 cup of goji berries

1 teaspoon of salt

1 tablespoon of fish sauce

1/4 cup of scallions, thinly sliced
Directions
- In a pot, add water, pork tenderloin, ginger and dates. Bring the water to boil and lower the heat and simmer for two hours. Skim any foam that forms at the top of the broth.
- At 1.5 hours, add the apples. At one hour and 45 minutes, add the goji berries, salt and fish sauce. Taste and adjust seasoning.
- Ladle into bowls and top with scallions.
