Power greens stir fry

This dish incorporates just a few simple ingredients but packs a ton of nutrients and flavour. Instead of buying all of the veggies for the stir fry separately, which can be pricey and add to food waste, I purchased a package of coleslaw mix which was a fraction of the cost.

Ingredients

  • 1 tablespoon oil
  • 455 grams ground turkey
  • 3 green onions, sliced
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 4 cups kale slaw mix
  • 2 tablespoons soy sauce

Directions

  1. In a large skillet, heat the oil over medium-high heat. Add the turkey, and cook, breaking it up with the side of a spoon, until it is no longer pink, about five minutes. Add the green onion, garlic, and ginger. Cook, stirring, until they become fragrant, about one minute. Stir in the kale slaw mix and soy sauce. Cook, stirring occasionally, until the greens are bright green and begin to soften, about two to three minutes.
  2. Serve immediately or store in the refrigerator for up to three days.
