Savoury waffles that make the perfect 'wafflewich'

I’ve loved waffles for as long as I can remember. In Québec, we often enjoy waffles drizzled with maple syrup and sprinkled with cinnamon. In this recipe, I’m reimagining the classic recipe by turning it savory. The waffles replace classic sandwich bread slices, creating a “wafflewich”! Just add a lean protein and the vegetables of your choice.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 packet instant dry yeast
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup butter, melted
  • 1/4 cup plain Greek yogurt
  • 1 2/3 cups milk
  • 1/2 cup shredded light cheddar

Directions

  1. In a large bowl, combine the flour, instant dry yeast, and salt.
  2. Mix in the eggs, melted butter, and yogurt, then incorporate the milk. Beat until you reach a smooth consistency.
  3. Stir in the cheese.
  4. Cover the mixing bowl with a damp towel and let the batter rest for 30 minutes.
  5. Oil the plates of the waffle iron and heat as per the manufacturer’s instructions, then pour on.
  6. some batter to cover the whole surface (but be careful not to overfill).
  7. Cook each waffle for about five minutes. The cooking time will vary depending on the size of the waffles you make and the type of waffle iron you use.
  8. Once the waffles are cooked and have cooled slightly, pair two of them with your desired spreads and sandwich fillings, and enjoy!
