An easy mashed potatoes recipe for when you're in a pinch.

Ingredients
1.3 kilograms Yukon gold/russet/baking potatoes, peeled and cubed
1/2 cup hot milk
4 tablespoons butter
Salt and pepper to taste
Directions
Place potatoes in a pot and cover with water and 1/2 teaspoon salt. Bring to a boil, then drop heat to medium-high and cook for 10-15 minutes until fork tender.
Drain potatoes and allow to sit in colander for a couple of minutes for excess moisture to evaporate.
Transfer hot potatoes, butter, salt and pepper to a stand mixer fitted with the whisk attachment. Begin to whisk, and slowly stream in hot milk. Continue to whisk until smooth.
