Simple succotash

The ultimate warm weather side dish! Made with hearty fava beans, crispy red bell peppers. and corn, this salad is refreshing and flavourful. 



  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, pealed
  • 3 green onions, sliced firmly
  • 1/2 cup frozen lima or fava beans, thawed
  • 1/2 red bell pepper diced finely
  • 2 ears corn, kernels cut from cob, or 1 cup frozen corn, thawed
  • 1 handfull fresh cilantro, stemmed and chopped
  • 1/4 teaspoon dried chipotle powder or a pinch of cayenne powder
  • Salt and pepper, to taste
  • 1 tablespoon freshly squeezed lime juice


  1. In a large sauté pan over medium heat, add oil, butter, garlic and green onion. Cook for one minute, stirring a couple of times.
  2. Add beans, bell pepper and corn. Cook for five more minutes, stirring occasionally.
  3. Finish with cilantro, chipotle, salt, pepper, and lime juice. Serve and enjoy!
