Smashed cucumber and radish salad

Ingredients

  • 225 grams baby cucumbers halved lengthwise
  • 225 grams red radish
  • 1 tablespoon kosher salt
  • 2 cloves garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 tablespoons rice vinegar
  • 1 1/2 tablespoons sugar
  • 1 cup plain Greek yogurt, hung in cheesecloth

Directions

  1. Slice baby cucumbers in half lengthwise, crush gently with a meat mallet/ heavy knife/ bottom of a pot, then slice the pieces into large chunks.
  2. Also crush the whole red radish in the same fashion, combine with cucumber and toss with salt, reserve for ten minutes, then discard rendered juices.
  3. Combine the remaining ingredients, then toss with cucumbers and radish, adjust seasoning to taste.
