South Indian fried fish (Meen Varuval)

Ingredients
- 4 grouper steaks/any other firm white flesh fish (approximately 1-inch thick)
- 2 tablespoons coriander powder
- 1 tablespoon ground red chili powder
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 2 limes
- Thinly sliced sweet white onion, to garnish
Directions
- Combine coriander powder, red chili powder, turmeric, salt, and juice of two limes to make a paste.
- Rub paste over grouper steaks, ensuring all sides are coated. Allow to marinate for 15 minutes.
- Fill a large frying pan with half an inch of a neutral oil like canola or vegetable. Heat to 350 degrees Fahrenheit.
- Fry fish for three to four minutes on each side or until golden, crisp, and firm to the touch.
- Serve with thinly sliced sweet onions, a squirt of lime, and a pinch of salt.
