Spiced banana oatmeal pudding

A delicious breakfast/brunch/dessert dish with a little bit of Indian influence.

Ingredients
- 3 (28-gram) Sachets Quaker® Regular Instant Oatmeal (approximately 1 cup)
- 1 teaspoon ghee
- 1 cup almond milk
- 2 super ripe bananas, mashed
- 1/2 teaspoon ground cardamom
- 3 tablespoons toasted flaked/slivered almonds
Directions
- In a small pot on medium high heat add ghee and oatmeal. Cook for one to two minutes until oatmeal is slightly golden. Transfer to a bowl and set aside.
- In same pot, add almond milk, and mashed bananas. Bring to a simmer, and stir in oatmeal. Cook for five to six minutes until oatmeal has thickened.
- Remove from heat and stir in cardamom. Serve in bowls and garnish with toasted almonds just before serving. Enjoy!
