Stuffed brownie cookies

  • 1 cup chopped dark chocolate
  • 1/4 cup unsalted butter
  • 2 eggs
  • 1/4 cup white sugar
  • 1/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2/3 cup all purpose flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup milk chocolate chips
  • 2 chocolate bars of your choice, chopped into 2.5 centimeter pieces


  1. Pre-heat oven to 375°, and line two baking sheets with parchment paper. In a large saucepan over medium-low heat, melt chopped chocolate and butter. Remove from heat and whisk in eggs, both sugars and vanilla and set aside.
  2. In a medium sized mixing bowl sift together flour, cocoa powder, baking powder and salt.
  3. Add the flour mixture to the chocolate mixture and fold in the milk chocolate chips.
  4. Using a tablespoon cookie scoop, place one scoop of the brownie batter onto prepared baking sheet. Nestle a piece of chocolate bar in the centre and then scoop another tablespoon of the batter on top. Repeat until all the batter is used.
  5. Bake for 17-19 minutes.
  6. Remove from the oven and let cool on baking sheets for about 15 minutes, then transfer to a wire rack and let cool completely. Enjoy!
