Sweet corn relish

Add some colour to your hot dog with this delectable sweet corn relish.

Ingredients
- 2 tablespoons olive oil
- 1 medium red onion finely minced
- 1 clove of garlic, minced;
- 1 red pepper cut into very small dice
- 1 orange pepper cut into a very small dice
- 1 medium zucchini cut into a very small dice
- 2 cups fresh corn cut off the cob
- 1 cup green beans cut into fine little rounds
- 4 tablespoons of cider vinegar
- 1 knob of butter
- 3 tablespoons raw sugar
- 3 tablespoons each of torn basil, chopped parsley and chives
Directions
- Heat the oil in a heavy or cast-iron skillet over medium-high heat.
- Add chopped onions and cook over medium heat until slightly soft, about five minutes.
- Add garlic and sauté for another two minutes.
- Add peppers, corn, beans and cook for four to five minutes, until vegetables are soft, and starting to caramelize.
- Add the vinegar and reduce by half
- Add the sugar and stir through then the butter and stir through.
- Add salt and pepper to taste. Let the mixture cool a bit.
- Finish with the fresh chopped herbs and serve.
