Add some colour to your hot dog with this delectable sweet corn relish.

Ingredients
2 tablespoons olive oil
1 medium red onion finely minced
1 clove of garlic, minced;
1 red pepper cut into very small dice
1 orange pepper cut into a very small dice
1 medium zucchini cut into a very small dice
2 cups fresh corn cut off the cob
1 cup green beans cut into fine little rounds
4 tablespoons of cider vinegar
1 knob of butter
3 tablespoons raw sugar
3 tablespoons each of torn basil, chopped parsley and chives
Directions
Heat the oil in a heavy or cast-iron skillet over medium-high heat.
Add chopped onions and cook over medium heat until slightly soft, about five minutes.
Add garlic and sauté for another two minutes.
Add peppers, corn, beans and cook for four to five minutes, until vegetables are soft, and starting to caramelize.
Add the vinegar and reduce by half
Add the sugar and stir through then the butter and stir through.
Add salt and pepper to taste. Let the mixture cool a bit.
Finish with the fresh chopped herbs and serve.
