Sweet potato breakfast bowl

Ingredients

  • 1 sweet potato, pricked
  • ¼ cup plain 2% Greek yogurt
  • 1/4 red apple, sliced
  • 3 tablespoons pecans
  • 2 tablespoons pumpkin seeds, toasted
  • 2 dates, thinly sliced
  • 1 tablespoon hemp hearts

Directions

  1. Preheat oven to 400 degrees Fahreneit.
  2. Bake sweet potato on a baking sheet for 45 minutes until tender. Slice the sweet potato in half and place in a bowl.
  3. Top with yogurt, apples, pecans, dates pumpkin seeds and hemp hearts and enjoy!
