Soak the wheat berries for 12 hours in cool water. Drain, then boil in salted water until soft, about one hour. Drain, then add sugar, mix well, and set aside.
Roughly chop chocolate and walnuts. Remove seeds from pomegranate. Add pomegranate seeds, walnuts, chocolate, and cinnamon to wheat berries and mix well.
Divide into serving bowls, then add as much Vincotto (see recipe) to each bowl as desired.
